Beet soup...

Just made a simple beet soup or hot borscht. My version is cut beets into small pieces and boil in about four cups of water. After they have boiled about 15 minutes, scoop out two big spoonfuls of juice and beets into a bowl. Add salt, Mrs. Dash and cream. Eat! Very easy, fast and filling. Other recipes include more vegetables and the cold version is actually sweet! I may have to try this one too. But for now, on a cold night nothing beets hot soup. ;)
